Remy the rat, that is. Been wanting to try this forever. Super yum!



Took a bunch of tomatoes, pureed them, cooked them down and added garlic, olive oil and some onion right at the end, then pureed them again. I lined the pan with the tomato sauce, then layered on the zuch and eggplant discs, then a bit more olive oil. Bake covered at 375 until done.

No crust, no cheese (although the latter could be added at the very end). But good and yum!
